Ingredient Quantity
Black Lentils 45 grams dry (~150g cooked)
Broccoli (head and stalk) 250 grams
Cauliflower 150 grams
Shiitake or Maitake Mushrooms 50 grams
Garlic 1 clove
Ginger Root 3 grams
Lime 1
Cumin 1 tablespoon
Apple Cider Vinegar 1 tablespoon
Hemp Seeds 1 tablespoon
Extra Virgin Olive Oil 1 tablespoon
Step Action
1 Cook the Vegetables: Weigh and wash broccoli, cauliflower, mushrooms, ginger, and garlic. Boil or steam until tender (7-9 minutes).
2 Cook the Lentils: Bring water to a boil, add lentils, reduce heat, and cook uncovered for 18-20 minutes until "al dente." Drain and rinse under cold water.
3 Combine: Blend cooked vegetables and lentils with cumin, apple cider vinegar, and lime juice for a soup-like texture, or serve whole. Add cooking water to adjust consistency if needed.
4 Finish: Top with hemp seeds and drizzle with extra virgin olive oil.
